Cucumber salad with cilantro and lime

A super healthy vegetarian recipe for those who love to stay fit and active. It’s a great refreshing salad option to add into your regular diet.

Ingredients: 2 cucumbers peeled and sliced, 1 medium red onion sliced, 2-3 medium size limes juice, 2-3 tbsp of finely chopped cilantro, 2 table spoons of olive oil or coconut oil and salt to taste.

Method: First to remove the bitterness of the onions, take the onion slices in a bowl to sprinkle ¼ tsp of salt over them. Rub the salt well with onions and cover with water for few minutes. Drain and rinse the slices to add with cucumber slices in another bowl and add all ingredients and toss them well to get the flavour properly blended. Serve immediately along with any meal.
